Stuffed Dates
Dates
230g softened cream cheese
¼ cup finely chopped nuts (almonds, pistachios, walnut, pecans, etc.)
Method:
With a knife, slice dates lengthwise on one side only wide enough to receive the mixture. (Remove pits)
In a mixing bowl, blend all of the above ingredients and stuff each date.
Arrange on a tray and serve at room temperature.
Oats and Date Milkshake
A drink to boost your energy levels.
Dates seeds removed (Approximately 5)
1 cup Milk
3 tbsp. Oats
1 tsp Honey
Method:
Soak dates in ½ cup milk for 30 minutes.
Roast oats in a non-stick pan for about 5 minutes till slightly brown.
Let oats cool.
Grind dates and oats in a blender.
Add the remaining milk and honey and blend well.
Serve Chilled.
Date Pudding
500g (2 cups) finely chopped dates
125ml (1/2 cup) chopped nuts
125ml (1/2 cup) cake flour
125ml (1/2 cup) digestive bran
250 ml (1 cup) honey
10g (1 tblsp) melted butter
60ml (1/4 cup) milk
2 Eggs
5ml (1 tsp) baking powder
Pinch of Salt.
Method:
Mix all dry ingredients, Stir in the dates & nuts
Mix honey, butter, beaten egg and milk
Add to the date-flour mixture and mix well
Pour batter into a 16cm x 26cm baking dish
Bake in 180°C oven for 25-30 minutes until done.
Serve warm with custard.
